- Combine warm water and sugar, add yeast and wait 5 minutes to bloom
- Pour yeast mixture into the bowl of a stand mixer along with 250g bread flour. Mix until combined
- Add in rest of flour (250g) and mix for about three minutes, or until dough is not sticking to the sides of the bowl
- Pour in salt and mix for another 3 minutes
- Cube butter and gradually add until all three tablespoons are combined into the dough. Butter should be incorporated into the dough until the dough no longer sticks to the sides of the bowl (5-7 minutes). Dough should feel tacky
- Transfer dough to greased bowl and cover. Let rise for about one hour or until doubled in size
- Divide dough into five pieces (about 180g each) and stretch into a large rectangle. Roll onto itself into a cylindrical shape and pinch both ends closed
- Transfer sub rolls onto a parchment lined sheet pan, rest for about 45 minutes
- Preheat oven to 400°. Once preheated, place ice cubes into an over-safe tin and place on bottom rack
- Put rolls into oven and turn down oven temp to 375°. Bake for 22 minutes or until golden brown on top
